The Algarrobo is a pod of a tree that grows on the north coast of Peru. Also known as “Peruvian Carob”, this pod is a great source of protein, fiber (pectin and lignin), B vitamins, and sugar. Its common use is as a substitute for chocolate, due to its sweet taste, but with fewer calories and no fat.
